Mini Ice Cream Chocolate Sticks



I saw this at Junction 8 a product from Taiwan, so adorable and I bought it. Not really delicious, But i like the idea of mini ice cream sticks in different colors.

I also had an idea on little shelves with spells : Liquids (Honey) or Rashberry jam etc... all on the shelves, that we can sell, or add to the desserts. As they are liquid, in nice bottles.

My little pastry passage: Eclairs

Mr Ong told me to see if i could write a little pastry passage for him on any desserts; thought about it for a long time and decided on Eclairs, here goes the 2nd version:

Eclairs. Chocolate covered pastry with fresh cream within. I remember the first time my mummy bought an eclair for me. It was at Parkway Yamaha, I just had my very first lesson in Ballet. I was in my pink leotard and frilly skirt. She came up to me with a white paper box in her hands, with a great smile, she lifted the cover of the white box. The whiff of the cold chocolate fragrance made my little face light up. I peeped into the box , and saw three inviting eclairs. In my excitement, I took one of the eclairs, and took my first bite. The fresh cream oozed into my mouth, it was a cold and sugar tantalizing moment. The cream blended well with the chocolate topping, it felt like pure sweetness. The cold cream and that slight tinge of saltiness in the pastry lingered in my mouth as I gobbled up the rest of the eclair. I greedily looked at the other two pieces in the white box, but I knew that they are meant for my sister and my brother. I refrained myself from asking for another, but from then onwards, I looked forward to every ballet class. It was pure joy and sweetness at that moment, and there was no guilt of over indulgence within me. Years later, many other desserts came along the way and stole my attention away from eclairs. Till I had once more another taste of my good old eclairs. It was in my baking class that I enrolled in. They were conducting a lesson on chocolate fudge cakes, and also chocolate eclairs. I got really excited, and all the memories of the eclairs came flowing back into me. I stood there in the middle of the classroom, looking anxiously at how the teacher, stirred in the chocolate cream. She carefully explained to us about the pastry, and how it needs to be meticulously baked so that it will not lose the puffiness in the pastry. It was a whole lot of work for a little eclair. Finally the pastry was done, we all helped to fill the cream within the pastry and lastly to spread the layer of chocolate on top of it before placing it in the chiller to cool.

I sat down, and waited patiently for the eclairs to be ready. The eclairs were soon ready, and we were asked to try them. I looked at the little eclairs, and took a bite.

That little bite, felt different. It was the same sweetness that filled my mouth, but that same sweetness tasted much more than what I remembered. There was a pinch of nostagia in that bite, the fresh cream, the tangy salt in the pastry, the sweetness of the chocolate topping. At that moment, i felt like i was zapped back into the past; there i was again. Standing in my pink leotard and frilly skirt and biting into the eclairs. And now all around me were memories. I suddenly realised that when I was a little girl, in my little world, there could never be too much pastries, sweets or desserts. There will be no tooth fairies that come and steal my decayed tooth for eating too much. There was no fear of over-indulgence and no worries. It was like a dream land, where eclairs were everywhere, growing on trees, they were on flowers, and floating like little banana boats along the river of chocolate.

Expounded from this my first version:

Whenever mummy wanted me to smile, she knows what makes me smile. It
was after my ballet classes at yamaha parkway.. In my little pink
leotard, n frilly skirt, i look forward to that moment.. When u bite
into that eclair n your month oozes with the feeling of the cold
cream.. I will always make fun and open wide my mouth to show my mum.
With the chocolate topping on top of the pastry, it felt like pure
sweetness to me, at that time there was no guilt of over indulgence..
It was jus pure joy in that moment, when i delight myself in that
eclair! Just the thought of biting into that soft pastry with the
cream n the chocolate makes my heart skip. Whenever i finished one, i
will always ask my mummy for one more.. Just one more.. It made me
happy n that at that moment forget what my teacher had to say about my
posture, my poise. Somehow eclairs are fun to eat, with three
different fillings in your mouth, you taste the cream with the
chocolate n a tinge of tangy salt to finish the taste on the pastry.
In my world.. There are tonnes of sweets.. And there will no tooth
fairies that steal my decayed tooth for eating too much sweet stuff,
there will be no worries, cos eclairs are everywhere, growing on
trees, as flowers, floating like little banana boats on the river of
chocolate.. They are everywhere...

A pretty pink box




I saw a pretty pink box today at Maria's desk in my office! Its a red packet box from citi to customers! So pretty! Was super attracted to it so asked Maria if I could take a picture! Next time I will get my pastry to be in such striking boxes so that office colleagues will ask and its a viral marketing technique! Amazing! Haha!

Ugly Cake



I went to my customer's housewarming on sunday and she wanted me to bring back a melting cake... it tasted good when i was there.. but that gooey mess that was in the plastic bag was not all that appetizing... and Kelvin they all asked me just to throw it away.. haha! But I was thinking it seems like a waste, so when I got home, I just placed it into the fridge and forgot all about it! The next morning I woke up and was trying to look for something to eat! So i saw the ugly looking cake in the fridge and decided to take it out to try it.. It was hardened already and it tasted surprisingly great despite the ugliness.. Haha! So i decided that I will make my cake into an ugly cake that tastes not so sweet, it will make the person keep eating.. and the gooey mess.. haha a refreshing look to a cake!

I think its a great idea!

The Wishing Chair Encounter


I felt like reading my book again, and got more inspiration from there again! I wanted to have a fairy workshop, where little boxes get mended or little toys which are broken are mended. Where its like a very tiny workshop where fairies work and repair the little things in my shop.

Also read about dimple cottage! Haha! Like me, got dimples.. a fairy that has dimples! And I want to have a little shelf of spells and wishes.. and I will have to take it for them from the cupboard.. wooden type and like in a cottage.

My sister told me that I should do it like the magician's table, where the guests just have to wish for their desserts, and it appears. so we will not take orders, we will take their wishes and have little fairies attend to them! : )

Oh.. so exciting!

My Birthday Cake




Finally am able to post my birthday cakes photo here! It was a wonderful surprise that he managed to get the cupcakes at such short notice! Its too pretty to eat! Hee! But still it tasted sweet and delicious! : )

Baking Chocolate Fudge






Baked my second cake for my best bud Dede! Chocolate Fudge! The fudge was too hard, placed too mch gelatin in the mixture.. hmm.. haha! But gladded dede liked it!! But must improve improve! Hee!

Strawberry Shortcake

I went to the cake shop today and wanted to buy a cake for my grandma's birthday.. I saw an entire selection of cakes, from coco exotic, to tropical mango, strawberry shortcakes, and more! I got excited! My favourite was the Strawberry Shortcake! It looks big and creamy, a round cake tall as a hat and with big strawberries sitting all around on each whip cream twirls. It makes you feel like grabbing a bite off the entire cake! Its white and filled with cream! We ended up with a mango tropical but still I bought a piece of the strawberry shortcake for a taste of heaven! : P

The first bite melted my heart, the cake was soft and spongy, like it could bounce! And the cream was just right, not too sweet and yet not too much! There was little bits of strawberries in the middle of the cake topped with light cream. It tasted sweet, a little sourish becos of the strawberries, but yet the taste lingers in your mouth. Yet, it does not make you greedy wanting for more and more. One piece is just right..

Looking forward to an occassion to buy the whole cake... : ) haha! Should have taken a picture!!! SIgh... its really tasty... Aww. feel like eating it now ! : ) haha!

Okie need to wait a little while longer before i am able to indulge in another one of this!

Saw these pretty donuts! Really sweet, taste beautiful as well, especially the choco flavoured ones. I remember they use to sell those here, but i think they are not around anymore?!

Cupcakes galore

Inspiration of dreams. Taking that first step of faith towards something you really love to do.
I saw the cupcakes, and it was beautiful. That such beauty in pastry I have never realised.

My idea of my Jewel's little cafe is a sweets, pastry shop that seems to have walked out of your
dreams. A child like beauty, and the beauty in the sweets and the pastry that it seemed like it walked out of your fairy
tale.

Sweets as beautiful as rainbows, colours so rich that I cant help but bring everything home.
A sweet for everyone, a cookie for every rainy day and a cupcake for every child.

Cotton candy and ice cream. I am not too sure if i am being greedy but i think a place like this should
have all this for everyone!

My Pastry Cafe Dream

Attended my second baking class today, learnt chocolate fudge cake and almond praline cake... Interesting, i think i like decorating and icing the cake alot. Bought my book, on decorating cakes, beautiful.

Baked my first lesson cheese cake, strawberry heart cheese cake for my sister's birthday. Must remember to put the pictures here.




Had my vision today while reading the one motor magazine. Was thinking of some cafes that have very good desserts and the one motoring showed it The Canale (Chocolate pastry factory). And also there is this baking place, that has lots of fun baking things, should go find out about it, at bukit timah there.

Chocolate fudge cake looks good.... beautiful....

Yummy, wanna think of new ways to decorate it!

Okie time to sleep now and carry on my pastry dream in my dreams...
